Ingredients

  1. 1 Melted butter or margarine
  2. 3 large cooked, mashed sweet potatoes
  3. 1 cup sugar
  4. 2 eggs, beaten
  5. 1 tsp vanilla extract
  6. 1/3 cup milk
  7. 1/2 cup firmly packed brown sugar
  8. 1/4 cup flour
  9. 1/2 cup chopped nuts (optional)

Cooking Instructions

  1. 1

Combine 1/2 c. (1 stick) melted butter with next 5 ingredients in mixing bowl, mix well. Tip: Let mixture cool a few minutes before adding eggs or they will cook.

  2. 2

Pour in 2 qt. casserole dish.

  3. 3

For topping: Combine brown sugar, flour, 2-1/2 tablespoons melted butter and nuts (optional) in a small mixing bowl, mix well with fork until crumbly. Tip: Slowly pour melted butter into mixture while mixing with fork as you don't want it real wet and sticky.

  4. 4

Sprinkle topping over sweet potato mixture.

  5. 5

Bake at 350° for 30 to 40 minutes.
