  1. 2 zucchini, cut into 1/4" slices
  2. 1/4 cup gluten-free biscuit mix
  3. 2 cup spaghetti sauce
  4. 1/2 cup gluten-free biscuit mix
  5. 1 cup small curd creamed cottage cheese
  6. 1 egg
  7. 1/2 cup grated Parmesan cheese

Cooking Instructions

    Heat oven to 350°F.

    Grease 8x8x2 baking dish.

    Brown & drain ground beef.

    Place zucchini slices in single layer on bottom of dish. Sprinkle with 1/4 cup gluten-free buscuit mix. Top with beef & spaghetti sauce.

    Mix cottage cheese & egg. Then add 1/2 cup gluten-free biscuit mix until soft dough forms. Spread over sauce. Sprinkle with Parmesan cheese.

    Bake uncovered until hot & bubbly, about 30-32 minutes. Let stand 10 minutes before serving.
