Ladybirds Devon Mash Wraps

These are an old traditional party snack that have been around since i can remember , but they were made with leftover cold mashed potatoes and Devon only , since them they have been made many different ways , this is my version of them . Hope you like them :-) .

Ingredients

  1. 4 medium potatoes - peeled and cut into chunks
  2. 1 dozen slices of devon or ham or luncheon meat of your choice
  3. 1/2 dozen chives - finely chopped
  4. 1/2 dozen finely chopped parsley leaves
  5. 1 tbsp finely grated cheese of your choice - optional
  6. 1 egg
  7. 2 tbsp butter - broken into chunks
  8. 2 tbsp thickened cream / heavy whipping cream
  9. 1 pinch salt
  10. 1 pinch cracked black pepper

Cooking Instructions

    Peel , wash and chop the potatoes into chunks and add them to a pot of water ,making sure the water fully covers them and more . Bring to the boil and rapidly pgmmdp to boil , cook them for about 20 minutes or until very tender .

    Once cooked till very tender , remove from the heat and drain the water from the potatoes , then either place the drained potatoes back into the pot or into a bowl and add the broken up tablespoons full of butter into the potatoes and mash them until the butter is all melted and potatoes are fully mashed .

    Now add the cream and whisk until all combined and smooth , then add the egg and whisk together thoroughly until all is combine , smooth and creamy , if using cheese then add it next along with the finely chopped chives and parsley and season with salt and cracked black pepper and mix to combine all well . And then set it aside to cool a little , or the traditional way , in the fridge overnight .

    Once potatoes have cooled a little , place them into a piping bag , or they can be spooned onto the meat .

    Using the Devon , one at a time , pipe the potato mixture onto the meat , down the centre , from one end to the other . Then roll the Devon up and around the piped potato and secure with a toothpick and set the prepared roll aside and repeat with remaining Devon and potato mix until done .

    Place prepared Devon mash wraps onto a serving platter , serve and enjoy . :-) .

    NOTE : the potatoes can be pre boiled , leftovers or made and left in the fridge overnight to cool completely before preparing the wraps . :-)
