Ingredients

30 mins
  1. 2 lb hamburger
  2. 2 tbsp olive oil, extra virgin
  3. 1 small onion
  4. 3 clove garlic
  5. 1 packages sliced mini portabellas
  6. 1 potato (diced small)
  7. 4 stick celery (sliced thin)
  8. 6 cup beef broth
  9. 1 packages frozen mixed vegetables
  10. 1 Italian seasoning
  11. 1 cracked black pepper
  12. 1 sage
  13. 1 Cajun seasoning
  14. 1 garlic powder
  15. 1 grated Parmesan (for garnish)

Cooking Instructions

  1. 1

Heat olive oil in a soup pot, then sautee garlic, onions, mushrooms, potatoes and celery until onion is translucent and mixture is fragrant.

  2. 2

Add hamburger and cook through until brown.

  3. 3

Add some garlic powder, Italian seasoning, sage, Cajun seasoning, salt, and pepper to meat to help infuse flavors while hamburger browns.

  4. 4

When meat is browned drain as much grease as possible.

  5. 5

Add beef broth (add more or less, depending on thickness of soup preference).

  6. 6

Once soup gets hot add frozen vegetables and more of each spice until you reach preferred flavor.

  7. 7

Cook until vegetables reach preferred consistency.

  8. 8

Serve hot with grated Parmesan on top for garnish.
