Chipped Beef On Toast
Borrowed from my mother n law. I often forget about this recipe, but always glad when I remember it. A good, easy meal to throw together on those days when you forgot to lay out meat. Or don't really feel like cooking.
Ingredients

6 packages Slender sliced beef lunch meat. Your choice of brand.

1/2 stick butter

1 cup all-purpose flour

1/2 gallon milk

1 salt & pepper to taste

1 bread, toasted
Cooking Instructions

Cut up packages of meat into bite size pieces, or strips. Separate for frying.

After lunch meat is cut up and separated, throw it in a frying pan with your butter. Stir while frying for about 5 minutes or so.

Stir in your flour a little at a time to form a thick rue for gravy. Stir continuously to avoid scorching flour.

Add your milk about 1-2 cups at a time, while continuing to "whisk/stir" meat on the bottom of pan. Continue to add milk until you have the amount of gravy needed to feed your family. Mine is large, so use quite a bit. Cook on medium heat, stirring continuously until gravy thickens to your liking. I usually add my salt and pepper at this point. You can also begin getting your toast ready at this point.

Cut up toast into serving plate, or leave whole and let people cut it up themselves. I cut mine up with scissors to save time helping the kids with theirs while having dinner. Spoon gravy over toast and enjoy.
