Ingredients

5 lb chicken

1/4 tsp paprika

1/4 cup pineapple juice

3 clove garlic

1/2 cup red pepper, chopped

1/2 cup green pepper, chopped

1 cup pineapple, chopped

1 cup chicken stock

Pineapple Glaze

1 cup pineapple preserves

1/4 cup pineapple juice

1 tbsp lime juice

1/2 tbsp brown sugar

1 tbsp soy sauce

1/4 tsp ground ginger

1 pinch cayenne pepper

1 tbsp cilantro, chopped
Cooking Instructions

preheat oven to 350°F.

season chicken inside & out with salt, pepper, & paprika. fill roaster with pineapple juice, chicken stock & garlic cloves, then place chicken on top. roast for 45 minutes.

to prepare the glaze, add preserves, juices, Brown sugar, soy sauce, ginger, & cayenne to a sauce pan over low heat. whisk the ingredients until well incorporated, about 5 minutes. the consistency should he thick. whisk in cilantro just before glazing.

after 45 minutes, remove roaster from oven. fill roaster with peppers & pineapple. brush the glaze onto chicken & place back in oven for 20 minutes until skin is golden Brown.

allow 4-5 minutes to cool. remove chicken & serve with peppers & pineapple chicken
